Easy Corn Tortilla Pizzas

Corn Tortilla Pizza

Making these pizzas doesn’t require much planning ahead and they are so quick and easy to make! The best part is you can use whatever toppings you like (and have on hand).

Ingredients

  • 2 corn tortillas
  • 1/3 cup pizza or pasta sauce, divided
  • 3/4 cup shredded chicken or ground turkey, divided
  • 1 cup chopped vegetables (mushrooms, peppers, diced tomatoes, spinach, onions, etc.), divided
  • 1/2 cup shredded mozzarella cheese, divided

Instructions

  • Preheat the oven to 425°F. Spray a baking sheet with cooking spray. Place the corn tortillas on the baking sheet. Spread the sauce on the tortillas. Top the tortillas with the chicken or turkey, vegetables of your choice, and the cheese.
  • Bake in preheated oven for 6-8 minutes or until edges of the tortilla are crisp.
  • Mexican pizza variation: Use fat free refried beans instead of pasta sauce and top pizza with salsa, vegetables, and cheddar cheese.
